
Baked potato with broccoli, peppers & cheese stuffing*
1- Preheat the oven to 190 degrees C.
2- Wash the potato and prick all over with a fork. Place on a high shelf in the oven and bake for around an hour or until cook right through.
3- Meantime, boil, steam or microwave the broccoli for a few minutes and grate the cheese.
4- When the potato is cooked, scoop out the insides and mix with the chopped broccoli, diced peppers, cheese, mixed herbs and seasoning.
5- Stuff the filling back into the potato skin and bake for another 5-8 minutes, until the cheese has melted.
